Sweet Potato Smash Burgers
Smash burgers with caramalized onions in between two sweet potatoes as buns

Step 1
Preheat a pan medium low heat, spray with avocado oil and add in your thinly sliced onions. Season with salt and add in your chicken broth. Stirring every few minutes until the the chicken broth has fully reduced and the onions have caramalized.
Step 2
Preheat oven to 400 F. Wash your sweet potato (peel if preferred) and cut into 1/2 inch circular slices. Coat with avocado oil spray and season with smoked paprika, onion powder, garlic powder, and salt and pepper to taste. Roast for about 30 minutes, flipping halfway through or until center is fork tender.
Step 3
Form your ground beef into equal sized patties. Get a skillet over medium heat, spray some avocado oil to the pan and add your patties into the skillet. Smash them down as thin as possible with a spatula and season the top side generously with salt and pepper. Flip after 2 minutes and add the mozzarela slices on top while the other side finishes cooking for another few minutes.
Step 4
Layer your sweet potato, burger sauce, beef patties with cheese, caramalized onions, and top with another sweet potato slice. Enjoy!
