Step 1/3

Sauté Aromatics and Beef

  • 1 tbsp Olive Oil
  • 1 Onion
  • 1 tsp Ginger
  • 2 Garlic Clove
  • 5g Fresh Cilantro
  • 150g Beef

Heat avocado oil in a pot over medium heat. Add the diced onion, sautéing until softened and fragrant for about 5 minutes. Then minced garlic, ginger and fresh cilantro, sautéing until softened and fragrant, about 1-2 minutes. Increase the heat a bit and Add the diced skirt or sirloin steak, seasoning with salt and pepper to taste and cooking until browned on all sides, approximately 5-6 minutes.

Add Spices and Rice

  • 1/4 tsp Ground Cumin
  • 1/4 tsp Paprika
  • 1/4 tsp Ground Cinnamon
  • 1/8 tsp Ground Cardamom
  • 1/8 tsp Ground Clove
  • 40g Parboiled Rice, Uncooked
  • 100g Potato
  • 1 Roma Tomato

Stir in ground cumin, paprika, cinnamon, ground cardamom, ground cloves, salt, and pepper, cooking for another minute until the spices are fragrant. Add the roma tomato and cook for another few minutes until the tomatoes release a bit of the liquid. Add the potato and rice, mixing to ensure everything is throughly combines.

Step 3/3

Cook and Serve

  • 300mL Beef Broth

Pour in the beef broth, scraping any fond at the bottom of pot and bring to a boil. Reduce heat to low, cover, and simmer for about 20-30 minutes, or until the rice and potato is cooked and the liquid is absorbed, adding more beef broth if needed. Once cooked, fluff the pilau with a fork and serve hot.
