Instructions

Step 1/4

Prepare the Vegetables and Beans

  • 1 Roma Tomato
  • 50g Mushrooms
  • 1 tsp Olive Oil
  • 100g Baked Beans

Preheat your oven to 375°F (190°C). Place the halved tomato and sliced mushrooms on a baking tray. Drizzle with a little olive oil, season with salt and pepper, and roast for 10-15 minutes until softened and slightly caramelized. Heat the baked beans in a small saucepan over low heat until warm.

Step 2/4

Cook the Protein

  • 2 Turkey Sausage Links
  • 1 tsp Olive Oil

While the vegetables are roasting, heat pan over medium heat with a touch of olive oil. Cook the turkey sausage until browned and cooked through, about 4-5 minutes per side. Remove from the pan and keep warm.

Step 3/4

Cook the Egg and Spinach

  • 1 tsp Olive Oil
  • 3 Eggs
  • 30g Baby Spinach
  • 2 Slices Whole Grain Bread

In the same pan, add a small amount of olive oil if needed and crack the eggs, cooking sunny side up. Remove the eggs when done and sauté the baby spinach until wilted, about 2-3 minutes. Toast the slices of whole grain bread to your liking.

Step 4/4

Assemble and Serve

Arrange the cooked egg, turkey sausage, roasted tomato, mushrooms, baked beans, sautéed spinach, and toasted bread on a plate. Season with additional salt and pepper if desired.
