Instructions

Step 1/4

Prepare the Pasta

  • 60g Pasta, Fettucini or Spaghetti

Heavily salt your boiling pasta water. Cook the pasta according to the package instructions. Save some pasta water and drain and set aside.

Step 2/4

Cook the Shrimp

  • 150g Shrimp
  • 1/2 tsp Cajun Seasoning
  • 1 tsp Olive Oil

In a small bowl, toss the shrimp with Cajun seasoning, olive oil, salt, and pepper. Heat a pan over medium-high heat and cook the shrimp for 2-3 minutes on each side, or until opaque and cooked through. Remove from the skillet and set aside.

Step 3/4

Make the Alfredo Sauce

  • 1 tsp Olive Oil
  • 1 Clove Garlic
  • 60mL Milk
  • 15g Light Cream Cheese
  • 7g Grated Parmesan Cheese

In the same pan, heat olive oil over medium low heat. Add the minced garlic and cook for a minute until fragrant. Add the milk and light cream cheese to the pan. Whisk until the cream cheese melts and the mixture is smooth. Stir in the Parmesan cheese, garlic powder, salt, and pepper. Continue stirring until the sauce thickens slightly, about 2-3 minutes. Add some pasta water if needed to improve consistency.

Step 4/4

Assemble the Dish

Add the cooked pasta to the skillet with the Alfredo sauce and toss to coat. Top with the cooked Cajun shrimp. Garnish with chopped fresh parsley and a lemon wedge if desired.
